Kombucha Masterclass: Fermentation, Practice, Self-Sufficiency

As part of our monthly health workshops, organized in collaboration with ABC Zattere to introduce our annual November forum dedicated to global health, we present the second session, dedicated to making kombucha.

Kombucha is a fermented beverage that can promote a healthy gut microbiome and support digestion. Thanks to its probiotics and antioxidants, it fits into a holistic wellness and preventative approach. Consumed in moderation, it can contribute to a healthier and more mindful lifestyle.

Originating from a thousand-year-old Far Eastern tradition, kombucha is a living drink, constantly transforming.

During this 3-hour masterclass, we will delve into the heart of fermentation by exploring the SCOBY — the living culture that transforms sweetened tea into a sparkling, tangy, and naturally ferment-rich beverage.

A practical and sensory experience, designed to give you all the necessary basics to produce your own kombucha at home and continue to experiment independently.

What's included:

• Introduction to mixed fermentation
• Step-by-step guide to kombucha production

Please bring:

• a notebook for taking notes
• 1 jar with a lid (min. 500 ml)
• 1 airtight bottle (1 L)


About

Alvise Piovesan has worked in the restaurant industry for over 10 years, primarily as a bartender and consultant. A qualified sommelier, he deepened his knowledge of kombucha through specialized training, followed by several years of research and personal experimentation.
